The AmWest Pig Roast

Last Friday we hosted the not-so-annual AmWest Pig Roast at our office. After a couple of years off, we returned to inviting our industry of people. I don't have a count yet, but I'm guessing about 130 people showed. Tom and I cooked for the two weekends before, and late Thursday night, Tom went into the office with a couple other friends to get the meat going. We did hams this time instead of whole hog, but it didn't seem to matter! Everything was well received! We did a cajun theme this time and had several cajun sides. We even had a crawdad boil!

I made a Bananas Foster Bread Pudding that was to die for with a little vanilla ice cream and some caramel syrup, and we made beignets (cajun donuts) too.

I think we used every large pot we have (and we have several!), so everything was dirty! Several of the employees helped with setup and teardown afterward, so that was helpful! We washed what we could at the office and took the rest home to wash. We spent all weekend cleaning up!!
