From the insiders I've talked with the performance specs listed are the conservative estimates. Tesla had a problem with the early Model SP85D numbers being from a rolling start and it made too many people angry. The car they deliver will meet or exceed these numbers.
A person on a discord discussion group I'm in that worked on the semi project says that the gravimetric density of the newer packs will be about 30-35% better than what is coming on Model 3. So you could get a lot of the estimates about vehicle weight from the Model 3 LR being about 80kWh and the roadster being about 200kWh. It'll be heavy and that will make a difference to your track handling performance. But it will also be a very low CoG on that weight so that helps a bit.
What a surprise it was to see this already. Well, it won't be produced for another 2.5 (let's face it - Elon time - 3.5) years but wow. just amazing.
