Older dogs do not equate with 'trained' dogs. You might get lucky however. Many larger kennels who 'retire' their dogs are 'kennel' raised and are much more difficult to train to be a house dog. A retired doodle is roughly 5 years old +/- and rarely socialized.
It is good that you know what you want. Unfortunately, it may be difficult to find a young doodle with all those bells and whistles. Have you considered working with a breeder that will send your pup out for training first before you get them? I know Kendra of Noble Vestal offers this service. Of course, you pay more, but in a case like yours, it may be worth considering.
It's not necessarily about cost, it's the fact that we want a dog out of its puppy stage who is house trained & social. Puppies are a lot more work, and it's a phase we want to skip.
