I don't buy that Christianity "draws the line" at baking a cake that is not part of the wedding ceremony will be eaten at a banquet hall, etc. after they are married.

Mr. Phillips decided to make it about Speech rather than Religion.

I suspect he did so on the advice of his attorney, as he really did not have a leg to stand on in terms of Freedom of Religion, as Mr. Will explained.
