Madeline,
Mical Wilmoth Carton has had a lot of experience doing those double-sided chairs and has posted here about them many times. Do a Search here for her posts on blind caning and double-sided cane and staining them.
There are also several pictures of her work in progress on the PictureTrail photo album for the forum that will probably help you a lot.

You can make your purchases through my Amazon affiliate on my website and also here at the top of the page. Click on the links, then key in the name of the book you want to purchase.
You can go to my website on the Seatweaving FAQ page to see which ones I recommend, or go by this list, too:
Seat Weaving by Ricky Holdstock
Chair Seating by Johnson, Barratt & Butcher
The Complete Guide to Chair Caning by Widess
The Caner's Handbook by Widess
Hope this helps the chair caners at SAGE!
