Don, You can do triple figure eights and I've seen chairs with even more. It's a quick way to fill up the sides and then you have a wide bridge at the end. The main purpose is to push the bridge back, past the center of the chair. I think it also makes a bit more comfortable seat than the diagonals all meeting in the middle, or in the case of the deep seat, ending up with a vertical bridge instead of the horizontal one. I dealt with this in The Caner's Handbook.
