to the canned stuff. I like the texture and taste better. I discovered this when I moved to the Boston area as a newlywed, and could find pie pumpkins at the roadside stands.

Not sure exactly what you need, if you are already making soup. I use the small "heavy for size" ones, not the big kind for jack'o lanterns. Do you bake the halves? Cut in half, scoop out seeds, place the halves face down on a baking sheet with a bit of water to keep it moist, and bake in the oven until the whole thing is soft. Then scoop the pumpkin from the softened shell, puree it, and freeze it. I usually freeze the puree in 1 cup increments in ziplock bags, or else in the amount I need for one pie.

Now comes the cooking part. Most recipes today tell you how many CANS of pumpkin you need for the recipe. If you don't have canned pumpkin, you need a recipe that tells you how many CUPS you need. I have my grandmother's old cookbook, which apparently was written before commercially canned pumpkin was popular.

Did you know that there is a specific variety of Pie pumpkin/squash that is proprietary to Libby? No one else can buy that variety, but Libby has growers who grow it for their processing plants. It actually ressembles a butternut squash more than a pumpkin.
