How to read specs on safety thermostats for kitchen stoves

30" Kenmore (Sears Canada) kitchen stove (oven, range) model: C970-512021, year: March 2005. I know that a safety thermostat reads 0 ohms when cold and infinite resistance when it reaches the desired temperature but how do I "decode" the temperature specs on the sticker of the part itself?, here is a picture of the one:

The above parts manual is for a similar model but it has the same schematics and electronic clock timer board. I tried Googling but many different results. Thank you in advance for help/replies.
